Polyphenols


Polyphenols are natural preservatives of olive oil. These are secondary chemical compounds of the metabolism of olive trees that are synthesized as a response to the stress situations of the culture. In recent years, there has been an increasing interest of polyphenols in olive oil because of its antioxidant properties and its role in preventing chronic diseases such as cardiovascular disease and various cancers.

After being obtained from the olive, only by physical processes, virgin olive oil is the unique vegetable oil that contains polyphenol, mainly derived from the Hydroxytyrosol which is an exclusive polyphenol of the Olive, with Eminent biological properties, with its antioxidant capacity.

Throughout history, olive oil has been used in many cultures as a natural remedy. Extra virgin olive oils with a high polyphenol content act in the body to protect us from a number of diseases:

Oxidative cell STRESS : Polyphenols are natural antioxidants that help to protect the lipids from the blood (fat) against oxidation. This is the EU-approved sanitary base for polyphenols in olive oil. Oxidative stress is linked to a series of diseases such as: high cholesterol, heart disease, Alzheimer's, cancer, etc.

Cardiovascular disease : Olive oil helps maintain good levels of "good" HDL cholesterol while polyphenol limits the oxidation of "bad" LDL cholesterol that causes plaques.
